Mashed avocado toast is one of my favorite healthy snacks, but when I am in the mood for a king’s breakfast I add sunny side eggs and oven-roasted cherry tomatoes to it. Now this is what you call the perfect salty hangover breakfast, full of healthy fats, protein and fibers. If you already had breakfast, this could also be eaten as lunch or brunch.
I can hardly call this a recipe, cause it’s super easy to make, but the possibilities are endless. You could add spinach, asparagus, mushrooms and pretty much anything else you like. I love to add the roasted cherry tomatoes on top because it adds a sweet flavor to the salty dish. It’s made on spelt bread, fresh from the bakery, but you can use any kind you like and toast it to enjoy a crispy bite.
Toast With Eggs, Avocado & Oven-Roasted Cherry Tomatoes
- 4 eggs
- 1 avocado
- 4 slices fresh bread
- cherry tomatoes
- squeeze of lemon
- pepper and salt
- Preheat the oven for 200°C. Line a baking sheet with parchment paper. Transfer the cherrytomatoes on the paper and drip some olive oil on top. Season with pepper and salt. Add to the oven once it's pre-heated and roast the tomatoes for about 15 minutes. Make sure they won't burn, keep checking.
- Meanwhile mash avocado in a bowl with a fork and add a squeeze of lemon. Season with pepper and salt to your taste. You could also add parsley, coriander or chives of you have it at home.
- Bake the 4 eggs in a skillet the way you like them the most. We love sunny side up 🙂
- Cut 4 pieces of bread (toasted or freshly baked from the oven) and spread them generously with the mashed avocado. Add one egg per piece of bread and finish with the tomatoes on top. Season with pepper and salt if you like!
