When it comes to fries, me as a Dutchie I am spoiled and critical. There are days that I can really crave for a ‘zak patat met mayo’, which literally translates itself into a bag of fries with mayonnaise from the Netherlands. That’s how we like it and it’s always a joy to eat. Looking for healthier alternatives, these oven baked sweet potato fries are absolutely a winner! It took some time to figure out how to create this crispy coat, but we found the way and it’s not even that hard, you just need to stick to a few steps.

We always used to keep the skin on the potatoes because it taste and looks good, but they actually become more crispy when you peel them. What we also used to do is bake them in olive oil. To create a crispy coat it’s better to use vegetable oil like canola oil. We listed out for you all the steps to take so from now on your sweet potato fries will always come out crispy!

How to make sweet potato fries crispy?

If you want to create a crispy coat make sure to always take these steps:

  1. Peel the potatoes and cut off the ends
  2. Cut them into same size wedges thinly
  3. Soak them in cold water for 30 minutes
  4. Dry them with kitchen paper
  5. Add them to a zipper bag and sprinkle with vegetable oil and the spices of your preference
  6. Shake it until spread evenly
  7. Add cornstarch on top and shake again
  8. Add to a baking sheet lined with parchment paper and make sure they don’t touch each other
  9. Bake for 30 minutes on hot air (210 ℃/415 F)

Make your own healthy sauce

Although sometimes you just need mayonnaise, if you’re looking for a healthier substitute, create your own sauce. These sweet potato fries taste amazing with home made yoghurt thyme sauce. Be creative and choose any kind of herb that you like. Rosemary, dill or chives would also taste great in this sauce. Try to use fresh herbs, but dry can work too. Use yoghurt as a base and mix it with herbs, spices, pepper and salt. We added garlic powder but you can also use 1 pressed fresh garlic.

Ingredients

  • 3 (organic)sweet potatoes medium size, we chose a colorful mix of purple and orange sweet potatoes.
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • pepper and salt
  • 1 tsp paprika powder
  • 1 tsp garlic powder

Yoghurt thyme sauce

  • 125 ml yoghurt
  • chopped fresh thyme
  • squeeze of a quarter lemon
  • pepper and salt
  • 1 tsp garlic powder of 1 pressed garlic

Instructions

  • Peel the sweet potatoes and cut the ends off. Cut them into small wedges in the same size and soak them in cold water for about 30 minutes.

  • Line a baking tray with parchment paper and pre-heat the oven for 210 ℃ on hot air. Dry the potatoes with kitchen paper and add them to a plastic zipper bag. Add the spices and the oil and close the bag. Shake it a few times until all the oil and spices are mixed up well with the fries. Now add two tbsp of cornstarch, close the bag again and shake it up.

  • Place the potato fries on the baking tray but makes sure they are all separate. This will help them bake as much crispy as possible.

  • Transfer into the oven for 30 minutes. Check after 15 minutes, always keep an eye on it in the last 15 minutes to make sure they don't burn (every oven works different).

Yoghurt thyme sauce

  • Mix all the ingredients and taste. Add more spices to your liking.
