Fresh, crunchy and easy salad made with pickled cucumber, red onion, dill & feta. Pairs perfect with anything from falafel to your favorite bbq dish.
This refreshing cucumber salad makes a delicious side dish to any meal. Especially on warm and sunny days, when the grill in the garden is on fire, this simple salad is all you need along with your bbq mains. The salad is inspired by my mom’s simple ‘salade de concombre, tomate et maïs’. A French side dish I love to eat on hot summer days. The cucumbers in this salad are salty, fresh and crispy. There are a few steps to make cucumber taste amazing. After slicing them the same size, my mother taught me to add them to a colander and sprinkle them with salt and leave it for one hour to release all the water and soak up the salt. In this new recipe we add also sugar. When sugar, salt and vinegar are combined you can pickle practically everything.
Choose Your Cucumber
There is more than 100 kinds of cucumber on this planet, so you better know which one you choose. In this recipe its best to choose a cucumber that has not too much seeds and a thin skin. Your best shot is to go to the farmers market and here in Lisbon also the Asian grocery stores usually have them. The English cucumbers have a thin skin, are strong and have a mild taste. Also the diva cucumber works great. It is smaller than the English cucumber, taste sweet, are crispy and have a glossy skin.
In this recipe I added two of my favorite ingredients, red onion and dill. Dill and pickled cucumber are just the perfect combination. Dill has a delicious fresh, citrus-like taste. Fresh dill is often added to vinegar brine or a salt brine because of their distinctive taste. Because red onions taste a bit sweeter than white onions it perfectly fits the pickled cucumber salad and adds a beautiful deep purple color to the salad.
How to Make Pickled Cucumber Dill Salad?
Cut your cucumber in thin slices. To make it easy for yourself and create the same size slices, use the help of a food processor. In case you don’t have one you can use a mandoline. When you have neither of those, then cut it with a sharp knife consistently. Add the sliced cucumbers to a colander and sprinkle with salt and sugar. This way the cucumber will keep their crunch while they brine and the excess water is releasing. Leave in the fridge for one hour. Then drain the cucumbers, add them to a bowl and stir in the vinegars, chopped onion and dill. It’s up to you to spice it up with crumbled feta on top. The combination is amazing but even without feta this salad will find its way into your heart!

Pickled Cucumber Dill Salad with Feta
- Philips HR7629 Food Processor
- 500 grams cucumber English cucumber or Diva cucumber
- ½ red onion chopped finely
- 2 tsp kosher salt
- 2 tsp granulated sugar
- 3 tsp red wine vinegar
- 3 tsp white wine vinegar
- ⅓ cup fresh dill chopped
- Slice the cucumber thinly with use of a food processor or mandoline. If you have neither of those, use a sharp knife and try to cut the slices consistently thin.
- Add sliced cucumbers to a colander set inside a medium size bowl and sprinkle with the salt and sugar. Place in the fridge about 1 hour.
- Drain the cucumbers and add to a salad bowl. Add the chopped onions and drizzle the vinegars. Add the chopped dill and season with pepper. Mix well together. If you wish crumble some feta on top.
