Broccoli Mushroom Burgers

  • 1 tbsp vegetable oil
  • 300 grams broccoli
  • 200 grams mushrooms
  • 1 egg or egg replacer ( 1 tbsp flax seeds with 3 tbsp of warm water)
  • 80 grams flour
  • 1 tsp cumin
  • 1 tsp curcuma
  • 1 tsp curry powder
  • 1/2 onion
  • 1 clove of garlic
  • 1 handfull of parsley and coriander


  • Cut the mushrooms in small pieces. Rinse the broccoli and cut them in very small pieces so you'll be able to make firm burgers. Chop the onion.

  • Heath up a little bit of oil in a baking pan. Bake the shopped mushrooms until soft and set aside.

  • Add the onion mushrooms and broccoli to a large bowl. Press the garlic above the bowl and add the spices and parsley and coriander. Flavor with a pinch of pepper and salt. Add the egg or egg substitute and the flour and mix it all together with your hands.

  • Cover a plate (big enough for 5 burgers), with parchment paper. Make 5 to 6 burgers and put them on the plate covered with parchment paper. You could keep them in the fridge for a bit if you want to bake them later.

  • Heath up 2 tablespoons of vegetable oil in a baking pan. Add the patties and fry them until both sides are golden brown. Flip them once or twice.

  • They can be served as patties with a salad or as a veggie burger in bun.

  • The white sauce is a simple mix of mayonaise, pepper and a squeeze of lemon. Of course you can choose your own favorite burger sauce of vegan mayonaise!
